LEARNING THE BASIC TECHNIQUES OF THE KITCHEN



1 Will be able to define kitchen rules, general principles of being a kitchen chef, kitchen hierarchy, basic principles followed in preparing standard recipes and menus.
2 Will be able to discuss the rules and importance of hygiene and sanitation in the kitchen.
3 Will be able to explain basic food types, heat transfer and basic cooking techniques.
4 Will be able to use chef's knife and basic kitchen tools.
5 Will be able to discuss the differences and usage areas of meat, chicken, fish and vegetable juices and basic sauces, soups, thickener and binder materials.

In this course, culinary and hygiene rules and principles, basic food types, heat transfer types and cooking techniques are explained. The course also covers the use of knives and basic cutting techniques, preparation of meat, fish and vegetable juices, basic sauces and soups, followed by basic egg cooking, sandwich, salad and vinaigrette preparation techniques.
